Halloumi & Carrot Fritters with Rice

Makes about 4-5 lunch boxes

Prep time: 20 minutes 

Cooking time: 20 minutes

Ingredients:

  • 3 carrots (250 g)
  • 1 halloumi (200 g)
  • 2 eggs
  • ¾ dl breadcrumbs
  • Salt 
  • Black pepper 
  • Herbs of your choice 
  • Olive oil

Method:

  1. Set the oven to 250 degrees Celsius 
  2. Grate the carrots and halloumi and put into a big bowl
  3. Add the eggs, breadcrumbs, salt, black pepper and other herbs of your choice. (I usually use basil and oregano, but whatever you have at home works)
  4. Mix everything together
  5. Line a oven plate with parchment paper
  6. Put some olive oil on your hands and start making round, flat buns and put them on the oven plate
  7. Pop your oven plate in the oven for 15-20 minutes
  8. Serve with rice or bulgur and your favourite sauce 
  9. Enjoy!
